- 1 Small Sweet Onion, sliced into 1/4-inch slices (See Notes)
- 2 1/2 Cup Buttermilk
- 1/4 Cup Panko breadcrumbs
- 1/4 Cup Cornmeal
- 2 Tbsp Seasoned bread crumbs
- 1/2 tsp Salt
- 1/4 tsp Granulated garlic
- 1/4 tsp Granulated onion
- 1/4 tsp Dried parsley flakes
- 1/4 tsp Paprika
- 1/16 tsp Black pepper
Separate the onion into rings and place them in a 1-quart bowl with the buttermilk. Cover and refrigerate for 1 hour.
Preheat the oven to 375 degrees. Prepare a small-rimmed baking sheet with parchment paper.
Mix the remaining ingredients in a 1 1/2-quart bowl.
Dip each soaked onion ring in the crumb mixture, coating well. Place each ring on the pan.
Spray all the onion rings with oil or cooking spray and sprinkle them lightly with salt.
Bake 18-20 minutes, until a light brown color. Serve immediately.
You want to use a sweet onion, not a regular onion, it’s too strong in flavor.
