  • 2 1/2 Cup Buttermilk
  • 1/4 Cup Panko breadcrumbs
  • 1/4 Cup Cornmeal
  • 2 Tbsp Seasoned bread crumbs
  • 1/2 tsp Salt

  • Separate the onion into rings and place them in a 1-quart bowl with the buttermilk. Cover and refrigerate for 1 hour.
  • Preheat the oven to 375 degrees. Prepare a small-rimmed baking sheet with parchment paper.
  • Mix the remaining ingredients in a 1 1/2-quart bowl.
  • Dip each soaked onion ring in the crumb mixture, coating well. Place each ring on the pan.
  • Spray all the onion rings with oil or cooking spray and sprinkle them lightly with salt.
  • Bake 18-20 minutes, until a light brown color. Serve immediately.

Notes

You want to use a sweet onion, not a regular onion, it’s too strong in flavor.
