Beef Shawarma Pita Pocket Sandwiches

This Middle Eastern dish is amazing with all of the various spices. Nothing exotic, probably in your spice collection. But wow, the combination is wonderful. This recipe is a very easy and quick meal. You will savor the distinct flavors and enjoy this delightful sandwich.

- 8 oz. Beef flank or flap steak
- 1 Cup Onion , cut into 1/8 inch slices
- 1 Tbsp Neutral oil
- 1 Tbsp White wine vinegar
- 1 Tbsp Lemon juice
- 2 tsp Minced garlic
- 1 tsp Lemon zest
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1/4 tsp Ground coriander
- 1/4 tsp Sweet paprika
- 1/8 tsp Cumin
- 1/8 tsp Ground turmeric
- 1/16 tsp Ground cloves
- 1/16 tsp Ground cayenne pepper
- 1/16 tsp Ground cinnamon
Sandwiches
- 1 Pita bread
- 1 Batch Shawarma sauce
- Additional vegetables , optional (See Notes)
In a 1-quart resealable plastic bag, add all the spices, olive oil, vinegar, lemon zest, minced garlic, and lemon juice. Mix to combine well.
Cut the meat against the grain, no larger than 1/4 inch thick. Add to Bag. Add sliced onion to the bag and toss to coat all ingredients.
Refrigerate for 30 minutes, or up to overnight.
Heat a heavy metal frying pan for 1 minute. Using tongs, add the marinated beef to the skillet and evenly distribute it. Wait 2 minutes and turn the meat. Cook for an additional 2 minutes
Heat a cast-iron skillet or heavy metal frying pan for 1 minute. Add the onion slices, and using tongs, add the marinated beef to the skillet and evenly distribute it. Wait 2 minutes and turn the meat. Cook for an additional 2 minutes.
Then remove the pan from the heat and set a side. Slice the pita bread, and gently open each pocket.
Add half of the beef to each pita bread pocket. Add 2 tablespoons of the Shawarma sauce and any vegetables if using, to each pocket. Serve immediately.
You can add any vegetables you would like or none at all. We recommend quartered cherry tomatoes and sliced cucumber.
