I have been making this for over 40 years. It is hearty and has a thick sauce to encompass all the flavors. This is one of my favorite dishes. I shared the recipe with his wife. I’m glad that I can also share it with you.
1/2CupCanned lima beans, butter beans, or cannellini beans, drained
2 1/2TbspLight brown sugar
2TbspTomato sauce
2TbspOnion, minced
2tspWhite vinegar
1/2tspDry mustard
Instructions
In a small frying pan, fry ground beef over medium heat. Drain and place in a small cooking pot. Fry the chopped bacon until done and slightly crisp. Drain and put in the cooking pot.
Add all the beans to the pot (please note some are drained and some are undrained).
Place the onion and 1 tbsp of water in a small microwavable bowl and cook for 1 1/2 minutes. Remove carefully and put it in the cooking pot.
Add the brown sugar, vinegar, dry mustard, and tomato sauce. Mix gently.
Heat the pot over medium heat. Bring to a simmer, reduce the heat if needed to maintain the simmer. Cover and simmer for 30 minutes for flavors to mingle, then serve hot.
