Fresh and easy summer salad. Marinate the chicken overnight, and you can have dinner in 30 minutes. A flavor-forward salad that is filling and tastes so good!
Prepare the marinade by combining everything except the chicken, red wine vinegar, and the granulated onion. Whisk to combine. Place 2 tablespoons in a quart-sized resealable plastic bag with the chicken. Remove air and seal. Place in the refrigerator for 30 minutes to marinate. (Can be marinated overnight).
Add 2 tablespoons of red wine vinegar and granulated onion to the unused marinade. Whisk and set aside for the dressing.
In a 2-quart bowl, add the coleslaw mix, carrot, cilantro, almonds, and green onions. Toss to combine. Chill until ready to assemble salad.
Oil and preheat the grill to 350°-375℉.
Place marinated chicken on the grill and cook for 5 minutes per side or until the internal temperature reaches 165 degrees.
Remove, cover, and rest for 5 minutes. Chop into 1-inch cubes. Set aside.
To the salad, add the dressing and toss to coat. Place on serving plates. Add the cubed chicken and sprinkle with the toasted sesame seeds.
