This is not your everyday rice dish. Using cauliflower rice makes it healthier. The spices and vegetables add color and flavor. The nuts add crunch and surprise. It is a delicious fusion of flavors and textures.
Heat the oil in a medium frying pan on medium-high heat.
Add the cauliflower rice and salt. Cook, stirring often for about 3 minutes.
In a 1-cup liquid measuring cup, mix remaining ingredients except the macadamia nuts.
Add to the rice. Cook for about 2 minutes, stirring often.
Reduce heat to medium-low and cook an additional minute. Rice should be done. The vegetables should be crisp-tender. Taste for salt and adjust if needed.
Top with chopped macadamia nuts and serve.
