Luau Cauliflower Rice

This is not your everyday rice dish. Using cauliflower rice makes it healthier. The spices and vegetables add color and flavor. The nuts add crunch and surprise. It is a delicious fusion of flavors and textures.

Ingredients
  

  • 1 1/2 Cup Cauliflower rice , thawed
  • 3 Tbsp Crushed pineapple , drained
  • 2 Tbsp Bell pepper , red, yellow, or orange, chopped
  • 2 Tbsp Green onion, sliced
  • 2 Tbsp Carrot , shredded small
  • 2 Tbsp Macadamia nuts , chopped for garnish
  • 1 Tbsp Coconut cream , not milk
  • 1 tsp Neutral oil
  • 1/4 tsp + 1/8 tsp Salt
  • 1/4 tsp Reduced-sodium soy sauce
  • 1/4 tsp Granulated garlic
  • 1/16 tsp Ground ginger

Instructions
 

  • Heat the oil in a medium frying pan on medium-high heat.
  • Add the cauliflower rice and salt. Cook, stirring often for about 3 minutes.
  • In a 1-cup liquid measuring cup, mix remaining ingredients except the macadamia nuts.
  • Add to the rice. Cook for about 2 minutes, stirring often.
  • Reduce heat to medium-low and cook an additional minute. Rice should be done. The vegetables should be crisp-tender. Taste for salt and adjust if needed.
  • Top with chopped macadamia nuts and serve.
