This is a wonderful spice mixture for seafood and more. It features a variety of herbs and spices, resulting in a well-rounded flavor.

- 5 Medium Bay leaves
- 1/2 tsp Celery seed
- 1/2 tsp Smoked paprika
- 1/2 tsp Dry mustard
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- 1/2 tsp White pepper
- 1/4 tsp Paprika
- 1/4 tsp Ground cayenne pepper
- 1/4 tsp Ground cardamom
- 1/4 tsp Ground nutmeg (See Notes)
- 1/4 tsp Allspice (See Notes)
Add about 5 medium Bay leaves to the small blender bowl of a Magic Bullet Blender, using the flat blade, pulse until evenly crushed. (See Notes)
Remove any large pieces. Measure out 1/2 Tablespoon. Add to a small bowl.
Add all remaining spices to the small bowl and stir until mixed well.
Old Bay uses a spice called Mace, which is not a common spice. So we used Nutmeg and Allspice instead.
You can do this with a spice grinder if you have one.
Store in an airtight container.
