Steak Tacos with Cilantro Lime Marinade

This recipe is so flavorful. You will need to like cilantro because it is used twice in this recipe. Feel free to add your own toppings. These tacos are fantastic!

Beef and Marinade
- 8 oz. Beef flank, flap, or skirt steak
- 2 Tbsp Neutral oil
- 2 Tbsp Fresh cilantro, minced
- 2 tsp Lime juice
- 2 tsp Honey
- 1 tsp Minced garlic
- 1/2 tsp Salt
- 1/8 tsp + 1/16 tsp Cumin
- 1/8 tsp + 1/16 tsp Ground ancho chili pepper
- 1/8 tsp Red pepper flakes
Tacos
- 4 Corn tortillas
- 1/4 Cup Fresh cilantro, chopped
- 1/4 Cup Monterey jack cheese, shredded small
- 2 Tbsp Onion , minced
Add the steak and the ingredients for the marinade to a 1- quart resealable bag. Mix and remove the air from the bag. Refrigerate for 60 minutes or longer.
Remove the marinated steak from the refrigerator 30 minutes before you are ready to grill. Grill the meat for 6-8 minutes on each side or to your desired doneness. Let it rest for 5 minutes. Cut the steak into thin strips.
Warm the tortillas, and evenly distribute the steak between the four tortillas. Layer the steak with the chopped cilantro (1 Tbsp per taco), the minced onion (1/2 Tbsp per taco), and the cheese (1 Tbsp per taco).
