Stove Top Tuna Noodle

Why wait an hour for tuna noodle casserole when you can have it ready in 20 minutes? This stove-top recipe will give you the same creamy, comforting, and filling dish. There is no need to open a can of soup to make this wonderful recipe. This is an easy, classic tuna noodle dish that can be made for any weeknight meal.

- 1 5 oz. can Tuna packed in water , drained
- 2 1/2 oz. Uncooked egg noodles
- 3/4 Cup + 1 Tbsp Fairlife 2% milk
- 1/4 Cup + 2 Tbsp Frozen peas and carrots , thawed (See Notes)
- 3 Tbsp Onion , minced
- 1 1/2 Tbsp Butter , divided
- 1 Tbsp All-purpose flour
- 1/2 tsp Minced garlic
- 1/4 tsp Dijon mustard (See Notes)
- 1/4 tsp Seasoned salt
- 1/8 tsp Salt
- 1/16 tsp Black pepper
In a small pot, boil the egg noodles in salted water according to the package. Drain, and place back in the cooled pot.
While noodles are boiling: In a small frying pan, over medium heat, melt 1/2 tablespoon of butter. Add minced onion and cook for 1 minute. Add thawed peas and carrots, and cook for 2 more minutes. Add minced garlic and cook for 30 seconds.
Set the frying pan aside until the noodles are done. Put the contents of the small frying pan into the pot with the drained noodles.
Using the same frying pan, same medium heat, melt the 1 tablespoon of butter. Add flour and whisk to combine. Continue to cook for 1 minute, whisking constantly.
While whisking, slowly add the milk. Bring to a boil, and whisk for 1 minute. Reduce the heat to low. Add in the seasoned salt, salt, pepper, and Dijon mustard. Whisk to combine.
Add the drained tuna to the noodle pot. Add the sauce to the noodle pot and place it over medium-low heat. Stir and cook for about 4-5 minutes or until all ingredients are warmed.
Taste for salt and pepper, adjust if needed. Serve immediately.
You can also use spicy mustard if you don’t have Dijon mustard
You can use only peas, only carrots, or small chopped broccoli, if you prefer.
