Teriyaki Chicken Meatballs

These meatballs are bursting with flavor. The homemade teriyaki sauce adds the perfect touch, it’s not too sweet or too salty. A great combination for a perfect meal for two!

Ingredients
  

  • 2 Tbsp Green onion, green parts only, sliced, for garnish
  • 1/2 tsp Neutral oil

For Meatballs

  • 8 oz. Ground chicken (See Notes)
  • 3 Tbsp Panko breadcrumbs
  • 1 Tbsp Pineapple juice
  • 1 Tbsp Reduced-sodium soy sauce
  • 1 Tbsp Green onion, white and green parts, sliced
  • 2 tsp Minced garlic
  • 1/2 tsp Granulated onion
  • 1/8 tsp Ginger Paste

For Teriyaki Sauce

  • 4 Tbsp Pineapple juice
  • 2 Tbsp Reduced-sodium soy sauce
  • 1 Tbsp Light brown sugar (See Notes)
  • 2 tsp Cornstarch
  • 1 tsp Minced garlic

Instructions
 

  • Add all ingredients for the meatballs to a 1-qt mixing bowl and mix well. I usually use my hand to combine the mixture completely.
  • Refrigerate for 15 minutes. Then form into 1 Tablespoon size meatballs. It should make 12 meatballs.
  • In a medium frying pan, with a lid, add 1/2 teaspoon of neutral oil. Add the 12 meatballs to the cold pan.
  • Heat the pan on medium-high heat. Cook for 3 minutes, reduce heat to medium, cook for 6 minutes, turning the meatballs every 2 minutes.
  • Reduce heat to medium-low. Add lid and continue cooking for an additional 5 minutes. Remove from heat.
  • Whisk all sauce ingredients into a saucepan. Cook on medium-high heat until it thickens, about 1-2 minutes.  Then turn the heat to low.
  • Add the meatballs to the saucepan and mix gently. Warm for about 2 minutes. Garnish with sliced green onions.

Notes

You can use ground turkey or ground pork instead of ground chicken.
Of course, you can use dark brown sugar or another sugar substitute.
We like to serve the meatballs over cauliflower rice and Carrots with an Asian Twist.
