Be warned: This cheese dip is addicting. It has a delightful flavor, and the cilantro adds a fresh touch. Try it once, you will be back to make it over and over. Bethany is in love with this cheese dip.

- 1/4 Cup Fairlife 2% milk
- 1 oz. Mozzarella cheese, shredded small
- 1 oz. Monterey jack cheese, shredded small
- 1 oz. Smoked gouda cheese, shredded small
- 1/2 Tbsp Fresh cilantro, chopped small, (See Notes)
- 1 tsp Butter
- 1 tsp All-purpose flour
- 1/32 tsp Black pepper
Turn your oven's broiler on to heat up.
In a small saucepan over medium-high heat, melt the butter; be careful not to burn it.
Add the flour and whisk together. Whisk for about 30 seconds until a light golden-brown.
Add the milk and continue to whisk for about 2 minutes. It will be slightly thickened.
Remove from heat. Add the cheeses and whisk gently for about 2 minutes. If it's not completely melted, return to low heat and continue to mix until melted.
Pour into an 8-oz oven-safe ramekin. Place the ramekin on a baking sheet, which makes it easier to handle, and place it under the broiler.
Leave the oven door ajar and keep a steady eye on the tops. They can burn in seconds! This should take 1-2 minutes.
Carefully remove from oven and top with the chopped cilantro. Serve immediately.
The cilantro makes a big difference to this recipe don't skip it.
We like to serve tortilla chips with this as a snack, but it's also great on tacos or burritos.
