In a 1-quart bowl, combine the oil, soy sauce, paprika, onion, garlic, salt, and pepper. Whisk to combine. Add the chicken pieces and evenly coat.
In a 1-Cup liquid measuring cup, combine the mayonnaise, Thai sweet chili sauce, Siracha sauce, honey, and lime juice.
Evenly divide the chicken among the 4 skewers. Set aside.
Oil and preheat the grill to 350°-375℉.
Place the skewers on the grill and cook for 2-3 minutes on all 4 sides. Chicken should have an internal temperature of 165℉.
Once grilled, use half the bang bang sauce to baste the chicken on all sides.
Remove from the grill, cover, and let rest for 2-3 minutes. Garnish with chopped cilantro and serve with the remaining bang bang sauce.
