Bang Bang Chicken Skewers Recipe for Two

Funny name, but an awesome flavored chicken skewer. The recipe is quick and easy to prepare and cook. The bang bang sauce rounds out the flavor profile perfectly. The slight kick is just right! Easy weeknight meal.

Funny name, but an awesome flavored chicken skewer. The recipe is quick and easy to prepare and cook. The bang bang sauce rounds out the flavor profile perfectly. The slight kick is just right! Easy weeknight meal.
Equipment
- 4 Skewers (See Notes)
- Gas Grill
- Knives
Ingredients
- 8 oz. Boneless, skinless chicken breasts , cut into 1-inch pieces
- 1 tsp Neutral oil
- 1/4 tsp Reduced-sodium soy sauce
- 1/4 tsp Granulated garlic
- 1/4 tsp Granulated onion
- 1/8 tsp Black pepper
- 1/8 tsp Salt
Bang Bang Sauce
- 2 1/2 Tbsp Duke's light mayonnaise
- 1 Tbsp + 1 tsp Thai sweet chili sauce
- 1 tsp Siracha sauce
- 1 tsp Honey
- 1/4 tsp Lime juice
- 1 Tbsp Fresh cilantro, chopped, for garnish
Instructions
- In a 1-quart bowl, combine the oil, soy sauce, paprika, onion, garlic, salt, and pepper. Whisk to combine. Add the chicken pieces and evenly coat.
- In a 1-Cup liquid measuring cup, combine the mayonnaise, Thai sweet chili sauce, Siracha sauce, honey, and lime juice.
- Evenly divide the chicken among the 4 skewers. Set aside.
- Oil and preheat the grill to 350°-375℉.
- Place the skewers on the grill and cook for 2-3 minutes on all 4 sides. Chicken should have an internal temperature of 165℉.
- Once grilled, use half the bang bang sauce to baste the chicken on all sides.
- Remove from the grill, cover, and let rest for 2-3 minutes. Garnish with chopped cilantro and serve with the remaining bang bang sauce.
Notes
If using wooden skewers, soak them in water for 60 minutes before using.
