Ingredients Â
- 8 oz. Potatoes , cut into 1-inch cubes
- 2 Tbsp Green onions, sliced
- 2 Tbsp Chives, sliced
- 1 1/2 Tbsp Light sour cream
- 1 tsp Onion , minced
- 1 tsp Plain greek yogurt
- 1/2 tsp Granulated onion
- 1/2 tsp Salt
- 1/2 tsp Apple cider vinegar
- 1/8 tsp Granulated garlic
- 1/8 tsp Black pepper
InstructionsÂ
- Place cubed potatoes in a small saucepan with 1/2 tsp salt and enough water to cover potatoes. Bring to a boil, reduce the heat to medium, and cook for 7-9 minutes. Potatoes should be fork-tender.
- Run cold water over potatoes and drain. Set aside to cool for about 10 minutes.
- Mix the remaining ingredients except 1 Tbsp of chives in a 1-quart bowl. Refrigerate until the potatoes are cool.
- Fold in cooled potatoes until well mixed. Cover and refrigerate for at least 30 minutes.
- Garnish with the remaining sliced chives. Serve cold and refrigerate any leftovers.
