Sour Cream and Onion Potato Salad

Do you enjoy sour cream and onion potato chips? This recipe is reminiscent of that beloved flavored chip. Tender potatoes covered in an onion, tangy, creamy sauce that is delectable.

Ingredients
  

  • 8 oz. Potatoes , cut into 1-inch cubes
  • 2 Tbsp Green onions, sliced
  • 2 Tbsp Chives, sliced
  • 1 1/2 Tbsp Light sour cream
  • 1 tsp Onion , minced
  • 1 tsp Plain greek yogurt
  • 1/2 tsp Granulated onion
  • 1/2 tsp Salt
  • 1/2 tsp Apple cider vinegar
  • 1/8 tsp Granulated garlic
  • 1/8 tsp Black pepper

Instructions
 

  • Place cubed potatoes in a small saucepan with 1/2 tsp salt and enough water to cover potatoes. Bring to a boil, reduce the heat to medium, and cook for 7-9 minutes. Potatoes should be fork-tender.
  • Run cold water over potatoes and drain. Set aside to cool for about 10 minutes.
  • Mix the remaining ingredients except 1 Tbsp of chives in a 1-quart bowl. Refrigerate until the potatoes are cool.
  • Fold in cooled potatoes until well mixed. Cover and refrigerate for at least 30 minutes.
  • Garnish with the remaining sliced chives. Serve cold and refrigerate any leftovers.
