Add the chicken broth, 1 tablespoon cilantro, salt, and lime juice. Stir and bring to a boil. Reduce the heat to low, cover, and cook according to package directions (usually 15-20 minutes).
Remove from heat and fluff with a fork. Garnish with remaining cilantro.
