Ingredients
  

  • 1/2 Cup + 1 Tbsp Chicken broth
  • 1/3 Cup Jasmin rice
  • 1 1/2 Tbsp Fresh cilantro, chopped, and divided
  • 1 Tbsp Butter
  • 1/2 Tbsp Lime juice
  • 1/4 tsp Salt

Instructions
 

  • In a small saucepan with a lid, add the butter and rice. Toast over medium-high heat, stirring frequently. Toast until light golden brown and fragrant.
  • Add the chicken broth, 1 tablespoon cilantro, salt, and lime juice. Stir and bring to a boil. Reduce the heat to low, cover, and cook according to package directions (usually 15-20 minutes).
  • Remove from heat and fluff with a fork. Garnish with remaining cilantro.
