Cowboy Spaghetti

When I saw the ingredients for this recipe, I thought, 'How odd.' Then I remembered when I had visited my aunt in Oklahoma, she had ordered chili and spaghetti at a restaurant. I showed Bethany, and she wanted to try it, so here we are. This is tasty! All the ingredients come together perfectly for a comforting dish to enjoy.

- 4 oz. 93% Lean ground beef
- 4 oz. Kielbasa sausage , sliced into 1/4-inch rounds
- 2 oz. Dry spaghetti , broken into thirds
- 3/4 Cup Canned petite-cut tomatoes , undrained
- 1/3 Cup Onion , chopped
- 1/3 Cup Beef broth
- 1 Slice Bacon, , trimmed of excess fat, chopped
- 2 Tbsp Sharp cheddar cheese , shredded
- 1 Tbsp Tomato paste
- 1 Tbsp Green onion or chives , sliced for garnish
- 1 tsp Minced garlic
- 1 tsp Tabasco sauce
- 1/2 tsp Worcestershire sauce
- 1/32 tsp Black pepper
Add chopped bacon to a Dutch oven. Heat on medium-high heat, stirring, for about 3-4 minutes. Add chopped onions and continue to cook for 3-4 minutes.
Add the Kielbasa sausage and cook for 3-4 minutes, or until the fat has rendered. Drain the bacon, onion, and Kielbasa mixture.
After draining, cook the ground beef in the same pot on medium heat for 3-4 minutes. Drain and place with other meats and onions.
In the pot, add the beef broth, Worcestershire sauce, black pepper, Tabasco sauce, garlic, canned tomatoes, and tomato sauce. Mix to combine.
Add the broken spaghetti to the pot and stir to coat. Cover with the drained meat and onion mixture. Place the lid on the pot and simmer for 18-22 minutes. Stir every 5 minutes and make sure spaghetti is covered to cook completely.
Add the shredded cheese. Cover for about a minute to allow the cheese to melt. Garnish with green onions/chives and serve hot.
We like to serve this with garlic French bread.
