This recipe was my mom’s (Bethany’s Grandma’s). We were able to make it into a 2 serving recipe. We kept the wonderful flavor, giving us fond memories when we tasted it. Bethany said, “Just like grandma’s meatloaf.” Hoping you enjoy it as much as we do.

  • Preheat oven to 400℉
  • In a small bowl mix ketchup and Worcestershire sauce to combine and set aside.
  •  In a 1-qt mixing bowl add all the remaining ingredients. Mix with a spoon or, my preferred method, your hand. Mix until just combined. Don’t over mix or you will have a dense meatloaf.
  • Add mixture into the pan and place in the oven. Cook for 15 minutes.
  • Reduce heat to 375℉, and add sauce to the top of the meatloaf. Return to oven and cook an additional 15 minutes. The internal temperature should read at least 160°F.
  • Important: after removing the meatloaf from the oven, let it rest for 10 minutes. This will make it easier to cut.

Notes

Make sure your mini loaf pan can hold 1 2/3 cups of water to ensure the meatloaf and topping will fit. If using a metal loaf pan check your meat loaf 5 minutes early.
Make sure to use seasoned breadcrumbs and Not Italian seasoned breadcrumbs.
We usually serve this with Green Beans with Bacon and mashed potatoes.
