French Onion Chicken Recipe for Two

If you love French onion soup, you will love this chicken recipe. It has all the flavor you expect and is satisfying.

Ingredients
- 2 5 oz Chicken thighs with skin and bones
- 2 oz Gruyere cheese, shredded and divided
- 1 Large Onion, sliced 1/4 inch thick
- 3 Tbsp Chicken broth (See Notes)
- 2 tsp Neutral oil, divided
- 1/2 tsp Granulated garlic
- 1/2 tsp Granulated onion
- 1/4 tsp Dried thyme
- 1/8 tsp Salt
- 1/8 tsp Black pepper
Instructions
- Heat oven to 375℉.
- In an ovenproof frying pan, add 1 tsp neutral oil. Turn heat to medium-high.
- Add the sliced onions, breaking them apart to cook evenly for about 3 minutes, stirring often. Add the thyme and the chicken broth. Stir until combined. Cook for about 1 minute. Place into a 1-Cup liquid measuring cup and set aside.
- Pat the chicken pieces dry with a paper towel. Sprinkle on both sides with salt, pepper, garlic powder, and onion powder
- Wipe the pan with a paper towel and add 1 tsp oil. Use medium heat, and place chicken thighs (on the side with most skin) down into the pan. Cook for 4-5 minutes, until golden brown. Turn over and cook for an additional 4-5 minutes
- Add the cooked onion mixture, placing it around the chicken pieces.
- Add 1 oz. shredded cheese to the top of each chicken thigh. Place the pan into the heated oven. Bake for 10-12 minutes or until the cheese is melted and bubbly.
Notes
Freeze leftover chicken broth into a regular-sized ice cube tray. When frozen, remove to a resealable plastic bag. One cube equals one Tbsp.
