Ham and Gouda Mini Quiches Recipe for Two

No crust is needed for these delicious mini quiches. The ham and cheese, with the spices, make these great-tasting little “muffins” of goodness. Make them for brunch, or as a perfectly sized appetizer for a party.

No crust is needed for these delicious mini quiches. The ham and cheese, with the spices, make these great-tasting little “muffins” of goodness. Make them for brunch, or as a perfectly sized appetizer for a party.

- Small bowl
- Muffin tin , standard size
- Knives
Ingredients
- 1/2 Cup Ham , chopped
- 1/2 Cup Gouda cheese , shredded
- 2 Large Eggs
- 1 1/2 Tbsp Shallot , minced
- 1 Tbsp Fairlife 2% milk
- 1 Tbsp Heavy whipping cream
- 1 Tbsp Chives, chopped for garnish
- 1/4 tsp + 1/8 tsp Dry mustard
- 1/4 tsp Worcestershire sauce
- 1/4 tsp Minced garlic
- 1/8 tsp Salt
- 1/16 tsp Black pepper
- 1/32 tsp Red pepper flakes
Instructions
- Preheat oven to 350℉. Spray four spots on a muffin pan generously.
- In a small bowl, add all of the listed ingredients, except the chives. Whisk to combine all the ingredients.
- Each muffin tin will take about 1/4 cup of the mixture. Divide evenly between the tins.
- Place in the preheated oven for 20-25 minutes. They will puff up and look like they are going to overflow. That is OK, they won’t. They will be set and a golden color when ready.
- Remove and place on a cooling rack. Gently remove after cooling for 5 minutes. Place a small amount of chives on each. Serve warm.
Notes
Store the quiches covered tightly with plastic wrap in the refrigerator for up to three days. To reheat, cover with foil and place in a 300℉ oven for about 10 minutes.
Reheating in the microwave is NOT recommended
