Onion Ranch Chicken and Potatoes Recipe for Two

Onion Ranch Chicken and Potatoes
This delightful dish requires a little preparation but is well worth it. The chicken and potatoes are flavorful and tender with that ranch zing.
Ingredients
- 2 4-5 oz. Chicken thighs with skin and bones
- 1 1/2 Cup Red potatoes, washed and cut into 1-inch cubes, about 2 small potatoes (See Notes)
- 1 Tbsp Ranch seasoning mix
- 1 Tbsp Onion soup seasoning mix
- 1/4 tsp Granulated garlic
- 1/4 tsp Season salt
- 1 Green onions, green parts only, sliced, for garnish
Instructions
- Preheat your oven to 350℉
- Add about 1 Tbsp of water with the potatoes (so they don’t dry out) to a 2-cup liquid measuring cup. Place in the microwave for 10 minutes. This step ensures that the potatoes are done when the chicken is fully cooked.
- While the potatoes are cooking, you can prepare your baking dish. Spray your 8X8 baking dish with oil
- Season each chicken thigh with 1/8 tsp each of seasoned salt and garlic powder, on both sides.
- Place both thighs into the prepared baking dish. There should be enough room so they don’t overlap. Place partially cooked potatoes around the edge of the baking dish; try not to have them on top of the chicken.
- Sprinkle the ranch seasoning and onion soup mix on the chicken and potatoes.
- Place foil over the baking dish and seal. This step ensures the chicken will stay moist. Cook for 15 minutes.
- Increase oven temperature to 400 ℉ and remove foil from baking dish. Cook an additional 10 -15 minutes, until the chicken and potatoes are fully cooked. Garnish with sliced green onions and serve.
Notes
You can use chicken breasts instead of thighs. Just remember you will need to keep the chicken at 4-5oz each piece.
You can use any potatoes you prefer or have on hand. We use red potatoes because they have slightly less sugar than russets.
