Small Batch Toffee Mixed Nuts Recipe

When we made these nuts, we couldn’t stop eating them. They are so delicious. They are simple to make, so you may find yourself making them often. The toffee is crunchy but not hard. What a treat for the holidays or anytime you are craving a buttery and nutty treat.

Toffee Mixed Nuts
When we made these nuts, we couldn’t stop eating them. They are so delicious. They are simple to make, so you may find yourself making them often. The toffee is crunchy but not hard. What a treat for the holidays or anytime you are craving a buttery and nutty treat.
Equipment
- Small saucepan
- Small frying pan
Ingredients
- 1/3 Cup Raw pecans
- 1/3 Cup Raw cashews
- 1/3 Cup Raw almonds
- 1/4 Cup Sugar
- 1 Tbsp Butter
- 1/2 tsp Vanilla extract
- 1/8 tsp Salt
Instructions
- Prepare a rimmed baking sheet with parchment paper. Tape the parchment paper to the baking sheet.
- Place the almonds in a dry medium-sized frying pan. Heat on medium heat. Roast for 1 minute.
- Add the remaining nuts to the pan. Roast the nuts for 4-5 minutes, shaking and turning the nuts every 30 seconds. Remove from heat and set aside.
- In a small saucepan, over medium heat, add the butter, sugar, vanilla, and salt. Using a silicone spatula, stir frequently and cook for 4-5 minutes, or until the toffee has turned a deep amber color and the sugar has melted.
- Add the roasted nuts to the saucepan and stir to coat the nuts. The toffee may not stick to the nuts very well at this point, but that’s OK. Cook for 1-2 minutes.
- Remove and spread on the baking sheet. Work quickly to spread nuts to a single layer.
- Cool the nuts in the refrigerator or a cool spot for 5-10 minutes. Once the mixture has cooled, break it into pieces.
- Store in an airtight container; the toffee will get sticky if left out in the air.
Notes
You can use any combination of your favorite raw nuts in this recipe. If using a larger nut, the roasting time will need to be increased.
