Thai Red Curry Soup with Chicken Recipe for Two
This soup is quick and packed with flavor. It has a beautiful blend of spices and is not too spicy. The fresh herbs are a must to bring it all together.

Only this year have I tried red and yellow curry soups. Even though I don’t enjoy spicy hot food, I could adjust the soup to my level. I have fallen in love with this soup. The coconut milk is a welcome flavor profile, and the vegetables complement each other.
I love mushrooms, so does my daughter-in-law Grèta, who was born in Hungary. I wanted to try something a little different, so here is a Hungarian mushroom soup. It’s so enjoyable with meaty mushrooms and ingredients that blend well together. It’s an absolutely wonderful-tasting soup.
If you love the Olive Garden’s Zuppa Toscana as much as I do, you will have this at home over and over. It is perfect. Slightly creamy with potatoes and kale (which I like, but it needs to be in small pieces).
I love everything about this soup. It is hearty, comforting, and full of meat and vegetables. I don’t add the cayenne because the soup is too hot for me.
If you enjoy chicken enchiladas, you will make this soup often. It has all the ingredients to make it tasty, filling, and comforting. You will be making this soup year-round.
I love clam chowder, Bethany not so much, but she likes this one. I wanted some good clam chowder, and here it is. This delicious soup is both filling and flavorful. Please enjoy!
I love soup, especially in the fall and winter. Add a piece of bread, and I am set. This soup is packed with lots of yummy ingredients, with a little cheese on top, it’s the total package.
