Calico Beans Recipe for Two

I have been making this for over 40 years. It is hearty and has a thick sauce to encompass all the flavors. This is one of my son’s favorite dishes. I shared the recipe with his wife. I’m glad that I can also share it with you.

Equipment

- Small frying pan
- Small pot with lid
Ingredients
- 2 oz. 93% Lean ground beef
- 2 Slices Hickory-smoked Bacon , chopped
- 1 Cup Canned kidney beans , drained
- 1 Cup Pork and Beans
- 1/2 Cup Canned pinto beans
- 1/2 Cup Canned lima beans, butter beans, or cannellini beans , drained
- 2 1/2 Tbsp Light brown sugar
- 2 Tbsp Tomato sauce
- 2 Tbsp Onion , minced
- 2 tsp White vinegar
- 1/2 tsp Dry mustard
Instructions
- In a small frying pan, fry ground beef over medium heat. Drain and place in a small cooking pot. Fry the chopped bacon until done and slightly crisp. Drain and put in the cooking pot.
- Add all the beans to the pot (please note some are drained and some are undrained).
- Place the onion and 1 tbsp of water in a small microwavable bowl and cook for 1 1/2 minutes. Remove carefully and put it in the cooking pot.
- Add the brown sugar, vinegar, dry mustard, and tomato sauce. Mix gently.
- Heat the pot over medium heat. Bring to a simmer, reduce the heat if needed to maintain the simmer. Cover and simmer for 30 minutes for flavors to mingle, then serve hot.
