Parmesan Stuffed Mushrooms Recipe for Two

We have tried this recipe several times, not because we had problems making it. The mushrooms are so flavorful we just wanted more. You’ll notice no added salt, the cheese brings flavor and saltiness.

Equipment

- Parchment paper
Ingredients
- 8 Medium-large Mushrooms, cleaned and stems trimmed (See Notes)
- 2 Tbsp Shallot or onion, minced
- 2 Tbsp Cream cheese, softened
- 1 1/2 Tbsp Belgioioso parmesan snacking cheese, shredded (See Notes)
- 1 1/2 Tbsp Seasoned bread crumbs (See Notes)
- 1 Tbsp Butter
- 1 Tbsp Fresh cilantro, minced (See Notes)
- 1 1/2 tsp Minced garlic
- 1/32 tsp Black pepper
Instructions
- Preheat oven to 350℉.
- Remove mushroom stems and finely mince, and set aside. Place the mushroom caps with the hole side up on the prepared baking sheet.
- Melt the butter in a small frying pan on medium heat. Add the shallots/onions and mushroom stems. Stir and cook for about 5 to 7 minutes, or until the onions are transparent.
- Add minced garlic and cook for 30 seconds. Remove from heat. Cool for 3 minutes.
- Add the remaining ingredients to the pan. Stir to combine.
- Fill mushroom caps with the mixture, pressing gently. Use about a 1/2 tablespoon per mushroom.
- Bake for 11 to 15 minutes, until mushrooms are tender.
- Cool for 5 minutes on the baking pan before serving.
Notes
We use Cremini or Baby Bellas but white button mushrooms will work here too.
We use Belgioioso Parmesan Snacking Cheese it lasts for a long time in the fridge without having to open a large amount of Parmesan, it also tastes delicious.
Make sure to use seasoned breadcrumbs and Not Italian seasoned breadcrumbs.
The cilantro is a must in this recipe as it brings a fresh touch.
