Salad with Pears and Goat Cheese Recipe for Two

This is not a boring salad. It is full of fresh flavors, and the vinaigrette adds a nice touch. The crunch of the pecans takes the place of the usual croutons. The goat cheese adds a wonderful creamy texture to this salad. This is one of our favorite salads.

Ingredients
- 3 Cups Mixed salad greens
- 1 Small Pear cored and sliced (See Notes)
- 10 Pecan Halves (See Notes)
- 2 Tbsp Dried cranberries
- 2 Tbsp Goat cheese (See Notes)
For Dressing
- 1 1/2 Tbsp Red wine vinegar
- 1 1/2 tsp Olive oil
- 1 tsp Honey
- 1/4 tsp Dijon mustard
- 1/4 tsp Salt
- 1/32 tsp Black pepper
Instructions
- In a small dry frying pan, over medium heat, toast pecans for 3-4 minutes or until you can smell the pecans. Set aside to cool.
- Add the red wine vinegar, Dijon mustard, honey, salt, and pepper into a 1-cup glass measuring cup. Whisk to combine. Slowly drizzle in the olive oil while continuing to whisk. This will create a smooth, emulsified vinaigrette. Set aside.
- Place the prepared salad greens on a cold salad plate. Evenly distribute the sliced pears, cranberries, pecan halves, and goat cheese on top of the salad greens.
- Just before serving, whisk the vinaigrette slightly. You can drizzle the vinaigrette on the salads or serve the dressing on the side.
Notes
The pear will darken, core, and slice just before assembling the salad.
Toasting the pecans makes them more flavorful and crunchy. You can use your favorite nut if you prefer.
You can also use Gorgonzola, Blue cheese, or Feta in place of goat cheese. We prefer the milder flavor of the goat cheese.
The dressing can be stored in the refrigerator for up to 3 days.
