Cooking for Two
This is one of my favorite recipes. We like our cashew chicken with lots of vegetables and cashews. You may not be used to the carrots and pineapple, but we think it rounds out the dish to perfection. The sauce, with a slight kick from the red pepper flakes, is mild. I am a wimp when it comes to spicy foods.
These potatoes are crisp on the outside and tender on the inside. The potatoes are mildly spicy because I am a wimp. Adjust to your liking. The spices add a delightful flavor to the crisp potatoes.
Only this year have I tried red and yellow curry soups. Even though I don’t enjoy spicy hot food, I could adjust the soup to my level. I have fallen in love with this soup. The coconut milk is a welcome flavor profile, and the vegetables complement each other.
If you love the Olive Garden’s Zuppa Toscana as much as I do, you will have this at home over and over. It is perfect. Slightly creamy with potatoes and kale (which I like, but it needs to be in small pieces).
Stepping out of our comfort zone, we wanted something different. These chicken thighs are different and amazing. We both liked the marinade flavors, and the green sauce was delicious.
This recipe can be made mildly spicy or full-on hot. This recipe, as written, is mild. I used the smaller measurements of the chili garlic sauce and red pepper flakes. I’m a wimp with spicy food, so adjust to your tastes and enjoy!
If you like a kick to your ranch like I do, then this recipe delivers. It’s also a snap to make.
