Garlic Cauliflower and Mushrooms Recipe for Two

My Cauliflower can’t be mushy, it needs to have a bit of a bite. I eat mushrooms anyway I can, I love them. This recipe surprised me with its flavor. The garlic was a nice touch and the Parmesan added a nutty note. I didn’t use the red pepper flakes because I am a wimp with spicy food.

Equipment

Ingredients
  

  • 1 3/4 Cup Frozen cauliflower, thawed and drained (See Notes)
  • 2 Cup Mushrooms, roughly chopped (See Notes)
  • 2 tsp Neutral oil
  • 2 tsp Minced garlic
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
  • 1/8 tsp Red pepper flakes, optional

Garnishes

  • 1 Tbsp Green onion, white and green parts, sliced
  • 1 Tbsp Belgioioso Parmesan Snacking Cheese, shredded (See Notes)

Instructions
 

  • Pat the cauliflower dry with a paper towel. Make sure each piece is roughly the same size.
  • Heat oil in a medium-small frying pan on medium-high heat. Add the minced garlic and stir for 30 seconds. Add the chopped mushrooms to the pan and cook for 1 minute, stirring them after 30 seconds.
  • Add the prepared cauliflower to the same pan. Cook for an additional 3 minutes, until cauliflower is golden and softened.
  • Time to add the salt, pepper, and red pepper flakes, if using, then Stir.
  • Place on a serving plate and top with sliced green onions and the shredded Parmesan cheese.

Notes

I have only used frozen cauliflower for this recipe. A head of fresh cauliflower is too much for us to use.
We use Cremini or Baby Bellas but any mushroom you prefer will work here.
We use Belgioioso Parmesan Snacking Cheese it lasts for a long time in the fridge without having to open a large amount of Parmesan, it also tastes delicious.
