Small Batch Fresh Apple Cake Recipe

This cake will surprise you. It has a stiff dough and is cooked at a low temperature for longer than the usual cake. But the biggest surprise will be the taste and texture of this awesome cake. The recipe for it is asked for a lot. It is not heavy in texture, has a light, refreshing flavor, and there is no need for icing. I make this cake a lot for family and potlucks.

Fresh Apple Cake
This cake will surprise you. It has a stiffdough and is cooked at a low temperature for longer than the usual cake. Butthe biggest surprise will be the taste and texture of this awesome cake. Equipment
- Small bowl
- Large silicone or wooden spoon
Ingredients
- 1/3 Cup + 1 Tbsp Granny smith apple , peeled and chopped (See Notes)
- 1 Tbsp Neutral oil
- 1 Tbsp Unsweetened applesauce
- 1/4 Cup Sugar
- 2 tsp Egg , well beaten
- 1 tsp Vanilla extract
- 1/3 Cup + 1 Tbsp All-purpose flour
- 1/8 tsp Baking soda
- 1/16 tsp Salt
- 1/8 tsp Ground cinnamon
For Topping
- 1/2 tsp + 1/4 tsp Sugar
- 1/8 tsp Ground cinnamon
Instructions
- Preheat oven to 300℉. (Low and long baking time) Spray your baking dish.
- You will need to use a large spoon to mix this cake. A handheld mixer will NOT work as the dough is very stiff.
- In a 1-quart mixing bowl, add the chopped apple, oil, applesauce, sugar, egg, and vanilla. Stir to combine.
- In a small bowl, mix the sugar and cinnamon for the cake topping. Set aside.
- Add the flour, baking soda, salt, and cinnamon. Mix to combine the ingredients. The dough will be stiff. Not runny like a cake mix.
- Spoon dough into the prepared baking dish, and even out the top. Sprinkle the cinnamon/sugar mixture on top.
- Place in the oven and bake for 50-55 minutes. Check with a toothpick; it should come out clean, no crumbs
- Remove to a cooling rack. Cake will be slightly crusty on top with a moist interior. When cooled cut into 4 equal pieces.
Notes
We use Granny Smith apples, but any tart apple will work for this cake.
Cover leftovers with plastic wrap or foil.
