Equipment
- Gas Grill
- 1-Gallon Resealable plastic bag
- Small bowl
- Knives
Ingredients
Ingredients for Marinade
- 2 4-5 oz. Boneless, skinless chicken thighs
- 1 Tbsp + 2 tsp Reduced-sodium soy sauce
- 1 Tbsp Minced garlic
- 1/2 Tbsp Lime juice
- 1/2 tsp Neutral oil
- 1/2 tsp Cumin
- 1/4 tsp Paprika
- 1/4 tsp Dried oregano
Ingredients for Green Sauce
- 1/2 – 1 Jalapeño pepper ,seeds and membranes removed (See Notes)
- 1/4 Cup Fresh cilantro, loosely packed
- 1 Green onion, chopped
- 3 Tbsp Duke's light mayonnaise
- 1 Tbsp Plain greek yogurt
- 1 tsp + 1/2 tsp Olive oil , divided
- 1 tsp Minced garlic
- 1 tsp Lime juice
- 1/8 tsp Salt
- 1/16 tsp Black pepper
Instructions
- Place the marinating ingredients in a resealable gallon bag. Mix and add chicken thighs. Remove air, seal, and place in refrigerator. Marinade for 4 to 24 hours; the longer, the better.
- Add the green sauce ingredients, except for the olive oil, in the small bowl of a Magic Bullet Blender. Blend until smooth.
- Add 1/2 tsp of olive oil to the blender and blend for 10 seconds or until completely combined. Do this twice more with the rest of the olive oil. Pour into a small bowl and set aside.
- Heat the grill to medium, 350℉. Remove chicken from the resealable bag and place on the grill. Shut the lid and cook for 5-6 minutes. Turn the chicken and cook for 5-6 minutes with the lid down. Meat should reach an internal temperature of 165℉.
- Pour green sauce over the chicken thighs and serve immediately.
Notes
If you want a spicy sauce, don’t bother seeding and removing the membranes of the Jalapeño; just chop as is.
