Ingredients
  

  • 8 oz. Boneless, skinless chicken breasts
  • 1 14.5 oz. can Chicken Broth
  • 1 1/4 Cup Canned pinto beans
  • 3/4 Cup Canned kidney beans , drained and rinsed
  • 3/4 Cup Canned Italian-style diced tomatoes
  • 1/2 Cup Tomato sauce
  • 1/4 Cup Onion , chopped
  • 1/4 Cup Sharp cheddar cheese , shredded for garnish
  • 6 Tortilla chips , lightly crushed for garnish
  • 2 Tbsp Cilantro , chopped for garnish
  • 1 tsp Minced garlic
  • 1 tsp Chipotle chili in adobo sauce , or more to taste (See Notes)
  • 1/2 tsp Cumin
  • 1/8 tsp + 1/16 tsp Dried oregano

Instructions
 

  • Place chopped onion in a microwaveable dish with 1 Tbsp water. Cook for 2 1/2 minutes. Carefully remove and set aside.
  • Add the chicken, broth, cooked onion, garlic, Chipotle chili in adobo sauce, tomato sauce, canned beans, diced tomatoes, cumin, and oregano into a medium-sized soup pot.
  • Cook on medium heat for 30 minutes. Remove chicken, shred, and put back into the pot, and cook for 15 minutes.
  • Taste for seasonings and adjust if needed. (Remember, you will add salty chips to the top of the soup.
  • Sprinkle with 2 Tbsp cheese, 1 Tbsp cilantro, and 3 crushed chips to each serving.

Notes

I usually open a can of Chilis in adobo sauce and put it in the Magic Bullet and blend until smooth. I portion out the amount I need for recipes and freeze it. Place frozen portions in a resealable plastic bag for future use.
