Thanksgiving Dinner for Two

Thanksgiving gives us warm and comforting feelings. Our family not only looks forward to a wonderful meal, but also to spending time together. We usually play games and watch a favorite movie. Mom says I outdid myself with the menu this year. Everything is so flavorful. I think the Crustless Pumpkin Pie is my favorite, but I had a hard time choosing. Mom’s favorite thing this year is the mini Cranberry Pecan Goat Cheese Balls.

Crispy Balsamic Brussels Sprouts
I’m not a Brussels sprout lover. I actually don’t like them prepared in any way. On the other hand, Bethany loved these. She didn’t have a problem eating them in two meals. This is the first time she tried Brussels sprouts, my bad. The glaze had a wonderful flavor, and Bethany said it was perfect for the sprouts.

Maple Sweet Potato Casserole
I like sweet potatoes at Thanksgiving, but also other times of the year. They are a nice switch from a Russet potato. This recipe gives you a different way to serve these awesome vegetables. Toasting them brings out their nutty flavor. The spices and pecans make for a flavorful and comforting dish.

Cornbread Dressing
I have been making this dressing for my family for several years. It is a simple recipe and is quick to make. The water chestnuts give it a nice crunch. This dressing is moist and has a crisp topping. Bethany says it’s delicious, and I definitely agree.

Cranberry Orange Glazed Cornish Game Hen
I haven’t made a Cornish hen in forever. But they are the perfect size for a meal for two. The glaze is a wonderful complement to the meat. It seals in the juices and makes a great crispy treat on the skin.

Crustless Pumpkin Pie
Your home will be filled with such a delicious and comforting smell when you make this pie. We went crustless to lower calories, and because neither of us is a fan of pie crust or graham cracker crust. This will remind you of Libby’s original pumpkin pie. It is the perfect pumpkin pie with all the lovely spices.

Apple Cider Sangria
This fall sangria is a balanced, refreshing cocktail. It is easy to make, and can be refrigerated up to 24 hours ahead. We chose it for our Thanksgiving meal because the flavors complemented our meal so well. It is not too sweet and is a smooth drink.
