Ingredients
  

  • 1/4 Cup Butter , softened
  • 1/4 Cup Brown sugar, packed
  • 3 Tbsp Sugar
  • 1 Large Egg yolk
  • 1/4 tsp + 1/8 tsp Peppermint extract
  • 2 Tbsp Cocoa powder
  • 1/4 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 Cup All-purpose flour
  • 2 Tbsp Lily's white chocolate no sugar added baking chips
  • 2 Tbsp Peppermint candy , crushed (See Notes)

Instructions
 

  • Pre-heat oven to 350℉. Line a baking sheet with parchment paper.
  • In a small bowl, measure the flour, baking powder, cocoa powder, and salt. Set aside.
  • In a 2-cup liquid measuring cup, add the sugars and butter. Cream for 1 minute using an immersion blender with a beaters attachment.
  • Add the egg yolk and peppermint extract. Mix.
  • Add the flour mixture in 3 parts, mixing by hand each time.
  • Add the white chocolate chips and crushed peppermint candy. Mix by hand until uniform.
  • Scoop out 3 Tbsp cookie dough for each cookie; you should have 6 cookies. Roll each cookie into a ball and place on a baking sheet. Refrigerate for 10 minutes.
  • Bake for 10-13 minutes or until cookies are no longer glossy.
  • Remove from oven and leave cookies on the baking sheet for 5 minutes. Remove cookies to a cooling rack to cool completely.

Notes

Place candy inside a plastic zip-top bag.  Seal and crush with a rolling pin, mallet, or heavy-bottom pan into small pieces, but not tiny.
