Chocolate Peanut Butter Cookies
These cookies are big and soft with the perfect blend of chocolate and peanut butter. You can never have too many kinds of cookie recipes to choose from! We always have a glass of cold milk, but coffee or tea would work just as well.
Equipment
- Small bowl
- Baking sheet
- Parchment paper
Ingredients
- 1/4 Cup Butter , softened
- 1/4 Cup Brown sugar, packed
- 3 Tbsp Sugar
- 1 Large Egg yolk
- 1 tsp Vanilla extract
- 2 Tbsp Cocoa powder
- 1/4 tsp Baking soda
- 1/2 Cup + 1 Tbsp All-purpose flour
- 3 Tbsp Lily's peanut butter no sugar added baking chips
Instructions
- Heat oven to 350℉. Line a baking sheet with parchment paper.
- Measure the flour, cocoa powder, and baking soda into a small bowl. Stir to combine. Set aside.
- In a 2-cup liquid measuring cup, cream the butter and sugars for 1 minute using an immersion blender with a beaters attachment.
- Stir in the egg yolk and vanilla.
- Add the flour, cocoa powder, and baking soda mixture in three parts. Stir by hand after each addition. Add the peanut butter chips and mix.
- Scoop out 3 Tbsp for each cookie; there should be 6 cookies. Roll cookies and place on the baking sheet evenly spaced.
- Bake for 12 – 15 minutes. The cookies will no longer be glossy. Cookies will be soft to the touch. Remove from oven and leave on cookie sheet for 5 minutes. Place on a cooling rack to cool completely.
