  • Heat oven to 350℉. Line a baking sheet with parchment paper.
  • Measure the flour, cocoa powder, and baking soda into a small bowl. Stir to combine. Set aside.
  • In a 2-cup liquid measuring cup, cream the butter and sugars for 1 minute using an immersion blender with a beaters attachment.
  • Stir in the egg yolk and vanilla.
  • Add the flour, cocoa powder, and baking soda mixture in three parts. Stir by hand after each addition. Add the peanut butter chips and mix.
  • Scoop out 3 Tbsp for each cookie; there should be 6 cookies. Roll cookies and place on the baking sheet evenly spaced.
  • Bake for 12 – 15 minutes. The cookies will no longer be glossy. Cookies will be soft to the touch. Remove from oven and leave on cookie sheet for 5 minutes. Place on a cooling rack to cool completely.
