Equipment

Ingredients
  

  • 2 6oz. Lobster tails , fresh or frozen (See Notes)
  • 1 Lemon , cut into wedges
  • 1/2 Cup European butter (See Notes)
  • 1 1/2 Tbsp Lemon juice
  • 1/2 Tbsp Chives, sliced, for garnish
  • 2 tsp Minced garlic
  • 1/8 tsp + 1/16 tsp Lemon pepper
  • 1/8 tsp Salt

Instructions
 

  • Preheat the oven to 400℉. Line a small rimmed baking sheet with foil.
  • Place the lobster shell side up on a cutting board. Carefully cut down the center of the shell from top to fin. Best to use kitchen shears. Be careful not to cut too deeply below the shell.
  • Open the lobster shell gently and use your fingers to loosen the meat from top to tail. Once loosened, gently pull the lobster meat through the shell and leave it on top of the shell. Remove the dark vein from the top of the meat. Repeat with the other lobster tail
  • Rinse the lobster tails and pat dry with a paper towel.  Place lobster tails, meat side up, on the baking sheet lined with foil.
  • Melt the butter in the microwave. Mix in the minced garlic, salt, lemon juice, and lemon pepper. Reserve half of the mixture for basting the lobster. The remaining butter will be served with the lobster tails for dipping.
  • Using a pastry brush, brush each tail with the butter mixture. Bake for 7 minutes. and baste again with butter mixture. Bake for 7 more minutes and check the temperature of the meat at the thickest part. It should register between 140 and 145 degrees. Do not overcook.
  • Once cooked, remove the lobster from the oven and let it rest for 1-2 minutes on the baking sheet.
  • Serve lobster tail with lemon wedges and butter for dipping. Sprinkle chives on top of tails. Serve hot

Notes

If using frozen lobster tails, thaw in the refrigerator overnight.
We used Kerry Gold, a European-style butter. It has less water than American butter and has an amazing flavor.
We like to serve this with our Crispy Asiago Asparagus Spears and our Creamy Garlic Asiago Risotto.
