Potato Salad with Apple Recipe for Two

This potato salad is amazing. It is not drenched in mayonnaise, so the flavors shine. It’s tasty and light in flavor. This potato salad is our go-to when we need a side dish for our grilled meals.

This potato salad is amazing. It is not drenched in mayonnaise, so the flavors shine. It’s tasty and light in flavor. This potato salad is our go-to when we need a side dish for our grilled meals.
Equipment
- Small pot
- Strainer
- Knives
- Scissors (See Notes)
Ingredients
- 6 oz. Red potatoes, cleaned and cut into 1/2 -inch cubes
- 1/3 Cup Apple, peeled and chopped
- 1 Tbsp Onion, minced
- 1 Tbsp Duke's light mayonnaise
- 1 Tbsp Chives, cut small (See Notes)
- 1/2 Tbsp Celery, finely chopped
- 1 tsp Red wine vinegar
- 1/2 tsp Olive oil
- 1/4 tsp Dijon mustard
- 1/4 tsp Salt
- 1/16 tsp Black pepper
Instructions
- Boil potatoes in water with 1/2 tsp of salt until done but still firm, about 10 minutes. Drain and let cool.
- While the potatoes are cooking, combine the remaining ingredients in a 1.5-quart bowl. Mix to combine.
- Add the cooled potatoes to the bowl. Mix gently. Taste for salt and pepper. Adjust if necessary.
- Refrigerate for at least 15 minutes before serving.
Notes
We prefer red potatoes, but you can use any kind of potato that will stay firm when cooked.
I use scissors to cut the chives.
