Cooking for Two
When I saw the ingredients for this recipe, I thought, ‘How odd.’ Then I remembered when I had visited my aunt in Oklahoma, she had ordered chili and spaghetti at a restaurant. I showed Bethany, and she wanted to try it, so here we are. This is tasty! All the ingredients come together perfectly for a comforting dish to enjoy.
I believe the seasoned breading makes a great Chicken Parmigiana, but the breading needs to be flavorful and crisp. This recipe meets that standard and goes beyond. The spaghetti completes the dish to perfection.
This is one of my favorite dishes. I have ordered it at restaurants many times. This recipe is a perfect copy of what I get in the restaurant. The eggplant pieces are tender on the inside and crispy on the outside. It is seasoned to perfection. With the side of spaghetti and sauce, it is a complete and delicious meal.
