Watermelon Caprese Mini Skewers Recipe for Two

These are so simple, but so delicious. Great for those who don’t care for the taste of tomato, but enjoy the flavor of a caprese dish. The watermelon makes it so refreshing and colorful.

Watermelon Caprese Mini Skewers
These are so simple but so delicious. Great for those who don’t care for the taste of tomato but enjoy the flavor of a caprese dish. The watermelon makes it so refreshing and colorful.
Equipment
- 4 Skewers , 5-inches long
- Knives
- Scissors
Ingredients
- 4 1-inch Watermelon cubes
- 2 Bel gioioso mozzarella snacking cheese, (See Notes)
- 2 Large Fresh basil leaves , cut into 4, 1-inch circles
- 2 Tbsp Balsamic vinegar , divided
- 1/2 tsp Kosher Salt , divided
- 4 Sprinkles Black pepper
Instructions
- Thread a watermelon cube, a round of basil leaf, and a ball of cheese onto each of the 4 mini skewers. You will have 2 cheese balls left over; feel free to enjoy.
- Arrange on a serving plate and pour 1/2 teaspoon of vinegar on each skewer. Sprinkle each skewer with about 1/8 tsp of the kosher salt and a sprinkle of black pepper.
- Serve immediately. (See Notes)
Notes
If you can’t find Bel gioioso mozzarella snacking cheese, you can use any fresh mozzarella. You will need 4 1-inch cubes.
You can make the skewers ahead of time, covering and refrigerating just the skewers. Remove from the refrigerator 15 minutes before serving. Right before serving, add the vinegar, salt, and pepper.
