Pork Kabobs with Pineapple Recipe for Two

These kabobs are tender and juicy. The flavors meld well together and result in a tasty kabob. The meat, vegetables, and pineapple are easy and fast to grill.
Equipment
- Gas Grill
- Knives
- 1-Gallon Resealable plastic bag
- Skewers (See Notes)
- Strainer
Ingredients
- 8 oz. Pork loin ,cut into 2” cubes (See Notes)
- 1 Small Onion , cut into 2” pieces
- 1 Red bell pepper , seeds and membrane removed, cut into 2” pieces,
- 1 Cup Pineapple Chunks ,drained
Marinade Ingredients
- 1/2 Cup Orange Juice
- 1 Tbsp Oyster sauce
- 1 Tbsp Honey
- 1/2 Tbsp Dijon mustard
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1/4 tsp Red pepper flakes, optional
Instructions
- Add pork cubes, onion, bell pepper, and pineapple into a resealable 1-gallon plastic bag.
- In a 1-cup liquid measuring cup, add the marinade ingredients. Whisk together. Set aside 1/3 cup of the marinade. Pour the remaining marinade into the bag.
- Seal the bag and toss until all is coated. Remove air from the bag, seal it completely, and place it in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high, about 350℉.
- Drain the bag's contents using a strainer. Discard the marinade. Evenly add the pork cubes, vegetables, and fruit pieces to 4 skewers.
- Grill each side for about 2 minutes, for about 8 minutes total. Baste with the reserved marinade. Then continue cooking for another 4 Minutes. Check the meat, it should reach 145℉.
Notes
If using wooden skewers, soak them in water for an hour before grilling.
A thick pork chop works instead of a pork loin.
Oven directions: Line a roasting pan with foil and spray with oil. Heat oven to 350°F. Place kabobs on the lined pan and place in the oven. Turn each kabob every 3-5 minutes, basting with reserved marinade. The total time is 12-15 minutes. The internal temperature of the pork should read 145°F.
