These little pies are big on flavor. Fresh apples, spices, and tender pie crust make a delightful dessert. A light glaze makes the pies a not-too-sweet treat.
Equipment
- Small saucepan
- 4.4-inch Circle cutter & fork or 4.5-inch Empanada Press
- Knives
- 2 Small bowls
- Silicone basting brush
Ingredients
- 1 9-inch Store-bought pie crust
- 1 1/2 Cup Granny smith apples , peeled and cut into 1/2-inch cubes
- 1 1/2 Tbsp Brown sugar, packed
- 1/2 Tbsp Sugar
- 1/2 Tbsp Butter
- 1 1/4 tsp Cornstarch
- 1/4 tsp Vanilla extract
- 1 tsp Apple pie spice
- 1 Large Egg
- 1 Tbsp Fairlife 2% milk
Glaze
- 1/4 Cup Powdered sugar
- 1 1/2 tsp Fairlife 2% milk
- 1/8 tsp Vanilla extract
- 1/16 tsp Apple pie spice
Instructions
- Into a small saucepan over medium heat, add both sugars, butter, cornstarch, vanilla, and apple pie spice. Mix to combine, add the apples, and stir to coat. Cook for 7 minutes.
- Remove from heat. Place on a plate and refrigerate until cooled, about 5 minutes.
- Preheat oven to 400℉. Prepare a small rimmed baking sheet with cooking spray.
- Unroll one of the 9-inch pie crusts and cut out rounds of dough about 4.5 inches wide. We used an empanada press to make our pies, but you can also use a large circle cutter and a fork.
- In a small bowl, add 1 egg and 1 tablespoon milk. Mix to combine.
- Fill each pie with 2 tablespoons of the cooled apple filling. Moisten outer edges lightly with egg wash (for a better seal). Fold in half and crimp edges together. Make 2 small slits on top of the pies. Place on the prepared baking sheet.
- Brush the top and sides of each pie with the egg wash. This will aid in browning.
- Place in oven and bake for 18 to 20 minutes, or until pies are golden brown. Let the pies cool on the baking sheet for 10 minutes.
- Mix all the ingredients for the glaze and brush it on the pies. Serve warm or room temp.
Notes
Store in an airtight container at room temperature or in the refrigerator for 2 to 3 days.
