Sweet Pepper Sausage Pasta Recipe for Two

This recipe is a quick one. You can make it for any weeknight dinner. Making our own Italian sausage gives it a fresher taste, and everything combines to taste awesome.

- Small pot

Ingredients Â
- 4 oz. Ground pork
- 1 Cup Canned Italian-style diced tomatoes , undrained
- 2 oz. Penne pasta , about 3/4 cup
- 1/2 Large Bell pepper , yellow, red, or orange, sliced
- 1/2 Cup Onion , chopped
- 1/4 Cup Belgioioso parmesan snacking cheese, shredded small , divided
- 2 1/4 tsp Italian Sausage Seasoning Mix
- 2 tsp Minced garlic
InstructionsÂ
- Add the ground pork and the Italian sausage seasoning into a 1-Quart mixing bowl. Mix with a spoon or your hands until well mixed. Refrigerate.
- Place the onion and bell pepper into a microwave container with 2 tablespoons of water. Microwave on high for 3 minutes. Remove carefully from the microwave and drain, then set aside.
- Boil the dry pasta according to package directions, adding 1/2 teaspoon of salt to the water.
- Cook seasoned pork sausage in a medium frying pan for 5 minutes or until fully cooked. The crumbled pork should be in medium-sized pieces. Drain and set aside.
- Place the garlic, bell peppers, onions, and tomatoes into the same pan. Heat over medium heat for 5 minutes, uncovered.
- Drain cooked pasta and add to the frying pan. Add the drained seasoned pork and the 2 tablespoons of Parmesan cheese. Mix and continue to cook over medium heat for an additional 5 minutes.
- Serve with one tablespoon of cheese on each serving.
Notes
We prefer to season ground pork rather than buy a seasoned Italian sausage link. It just tastes fresher. Mix your pork and seasonings up the night before, and this will be super quick to make.
